Cheesy Ground Beef Casserole with Potatoes

Ingredients:

  • 1 pound ground beef, crumbled
  • 1 yellow onion, diced
  • 3 to 4 pounds potatoes, peeled and sliced
  • 8 ounces or more Cheddar Cheese, shredded
  • 1 can Cheddar Cheese soup mix
  • 12 ounces evaporated milk or whole milk
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:

  1. Preheat and Prepare:
  • Preheat the oven to 350°F.
  • Spray a 9×13 baking dish with non-stick cooking spray.
  1. Cook Ground Beef and Onion:
  • In a large skillet, cook the diced onion and crumbled ground beef until the meat is fully cooked.
  1. Layer Potatoes and Meat:
  • Slice the potatoes to about 1/4-inch slices.
  • Add one layer of sliced potatoes to the bottom of the prepared baking dish.
  • Sprinkle the potatoes with salt and pepper.
  • Top the potatoes with approximately one-third of the cooked meat mixture, spreading it evenly over the potatoes.
  • Sprinkle one-third of the shredded cheese over the meat layer.
  • Repeat these layers two more times, ending with a layer of shredded cheese on top.
  1. Prepare Soup Mixture:
  • In a bowl, combine the Cheddar cheese soup mix, milk, and evaporated milk. Add optional salt and pepper if desired.
  1. Pour and Bake:
  • Pour the soup mixture evenly over the layered potatoes and beef in the baking dish.
  • Cover the baking dish tightly with aluminum foil.
  • Place the dish in the preheated oven and bake for one hour.
  1. Golden Topping:
  • After one hour, remove the foil from the baking dish.
  • Bake for an additional 15 minutes, uncovered, to get a golden topping on the cheese.
  • If the potatoes are thicker, you may need to bake the dish for a longer duration.
  1. Serve and Enjoy:
  • Once baked, remove the casserole from the oven and let it cool slightly before serving.
