These Cheesy Chicken Fritters are a delightful twist on traditional chicken nuggets. Tender chicken breast pieces are combined with eggs, mayonnaise, flour, mozzarella cheese, fresh dill, and seasonings, resulting in flavorful and cheesy fritters. They are pan-fried until golden brown and crispy on the outside while remaining juicy and tender on the inside. Served with a creamy garlic aioli dip, these fritters make for a delicious appetizer, snack, or even a main course.
Ingredients for Chicken Fritters:
- 1 1/2 lbs chicken breasts
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour (or alternative for gluten-free option)
- 4 oz mozzarella cheese, shredded
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 Tbsp Extra light olive oil (or any high-heat cooking oil)
Ingredients for Garlic Aioli Dip (Optional):
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions:
- Prepare Chicken Mixture: Dice the chicken breasts into 1/3″ thick pieces and place them in a large mixing bowl. Add the eggs, mayonnaise, flour, shredded mozzarella cheese, chopped dill, salt, and black pepper. Stir the mixture until well combined, cover, and refrigerate for at least 2 hours or overnight.
- Cook Fritters: Heat olive oil in a large non-stick pan over medium heat. Using a heaping tablespoon of the chicken mixture, form patties and place them in the hot pan. Flatten slightly with the back of a spoon and sauté uncovered for 3-4 minutes on each side or until golden brown and fully cooked through.
- Make Garlic Aioli Dip (Optional): In a small bowl or measuring cup, combine mayonnaise, pressed garlic clove, lemon juice, salt, and black pepper. Stir until smooth and well combined.
- Serve: Serve the chicken fritters hot with the optional garlic aioli dip on the side.
