These Cheesecake Stuffed Strawberries are a delightful, bite-sized dessert that’s perfect for any occasion. Juicy, ripe strawberries are hollowed out and filled with a creamy, sweet cheesecake mixture, then topped with a dusting of graham cracker crumbs for that classic cheesecake flavor. They’re easy to make, visually stunning, and absolutely delicious—a crowd-pleaser at any gathering!

Ingredients

  • 1 lb large strawberries
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup graham cracker crumbs

Instructions

  1. Prepare the Strawberries:
  • Rinse the strawberries under cold water and pat them dry with paper towels.
  • Using a paring knife, carefully cut around the top of each strawberry to remove the leafy cap. Hollow out the inside by removing a small amount of the core to create space for the filling. Prep all the strawberries and set them aside.
  1. Make the Cheesecake Filling:
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
  • Beat the mixture with an electric mixer until it’s light, fluffy, and fully combined.
  1. Fill the Strawberries:
  • Transfer the cheesecake mixture to a piping bag fitted with a round tip, or use a Ziploc bag with a small corner snipped off.
  • Pipe the cheesecake filling into each strawberry, filling them generously.
  1. Graham Cracker Topping:
  • Once the strawberries are filled, sprinkle the tops with graham cracker crumbs, or gently dip the tops into the crumbs for an even coating.
  1. Chill and Serve:
  • If you’re not serving immediately, refrigerate the stuffed strawberries until ready to serve. Enjoy them chilled for the best flavor and texture.

Tips

  • Strawberry Selection: Choose large strawberries that are firm and ripe for the best results. Larger strawberries are easier to hollow out and fill.
  • Make Ahead: These stuffed strawberries can be made a few hours ahead of time and stored in the refrigerator until serving. This makes them perfect for parties and events.
  • Variation: For an extra touch, drizzle melted chocolate over the filled strawberries or add a dollop of whipped cream on top.
  • Piping Tip: If you don’t have a piping bag, a Ziploc bag works just as well. Simply fill the bag with the cheesecake mixture, seal it, and snip off a small corner to create a makeshift piping bag.
