Cheeseburger Sliders

These Cheeseburger Sliders are the perfect combination of juicy ground beef, melted cheddar cheese, and soft, buttery rolls. Ideal for feeding a crowd at a party, game night, or even a family dinner, these mini burgers are packed with flavor and easy to make. The simple addition of mayonnaise keeps the beef mixture moist and flavorful, while the sesame seed-topped buns give a classic burger feel.


Ingredients (Serves 24 sliders)

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • ½ Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ large yellow onion, finely diced
  • ¼ cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or more sliced cheese)
  • 24 dinner rolls (or 2 packs of 12)
  • 2 Tbsp unsalted butter, melted (plus more to grease baking sheet)
  • 1 Tbsp sesame seeds

Instructions

1. Prepare the Oven and Baking Sheet:

Preheat your oven to 350˚F. Lightly butter the bottom of a rimmed baking sheet to prevent sticking.

2. Cook the Ground Beef:

Heat a large skillet over medium-high heat with ½ Tbsp olive oil. Add the finely diced onion and sauté for 2-3 minutes until softened. Then, add 2 lbs ground beef, breaking it apart with a spatula. Season the meat with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. Continue cooking until the beef is fully browned and cooked through.

3. Drain and Mix:

Tilt the skillet and spoon out any excess fat from the beef mixture. Stir in ¼ cup mayonnaise to keep the beef moist and add a creamy texture. Remove the pan from the heat.

4. Assemble the Sliders:

Slice the 24 dinner rolls in half horizontally. Place the bottom halves of the rolls on the buttered baking sheet. Line the bread with 8 slices of cheddar cheese. Spread the ground beef mixture evenly over the cheese, using the back of a spatula to pack it down and ensure an even layer. Top the beef with 6 oz shredded cheddar (or additional slices of cheese, if preferred).

5. Top and Bake:

Place the top halves of the buns over the beef, cut-side down. Brush the tops of the buns with 2 Tbsp melted butter and immediately sprinkle with 1 Tbsp sesame seeds for a classic burger finish. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and the buns are golden brown.

  • Make Ahead: You can assemble the sliders a few hours ahead, refrigerate, and bake when you’re ready to serve.

  • Don’t Overcrowd the Meat: When cooking the ground beef, be sure to break it into small crumbles to ensure even cooking and a better texture for the sliders.
