Cheese Potato & Smoked Sausage Casserole Recipe
Ingredients:
- 3 cups potatoes, peeled, boiled, & diced when cool
- 4 teaspoons butter
- 4 teaspoons flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 kilo Velveeta cheese, cut into cubes
- 1/2 cup shredded sharp cheddar cheese
- 1 pound skinless smoked sausage
- 1/8 teaspoon paprika
How to Make Cheese Potato & Smoked Sausage Casserole:
- Cut the skinless smoked sausage in half lengthwise and then into 1/2 inch “half moon” pieces. Cook in a cast-iron skillet for about 15 minutes, stirring frequently, until browned slightly.
- In a 2-quart saucepan, place the cooked and diced potatoes. Add the cooked meat, stirring gently.
- In a separate saucepan, melt the butter over medium heat. Add flour and whisk continuously until well combined.
- Gradually add milk to the butter and flour mixture, stirring constantly to avoid lumps. Continue cooking until the mixture is warm, melted, and smooth. This forms the white cheese sauce.
- Add Velveeta cheese cubes to the white cheese sauce and stir until the cheese is fully melted.
