Caramel Apple Sheet Cake

This Caramel Apple Sheet Cake is a delightful dessert that captures the cozy flavors of autumn in every bite. Made with fresh apples, warm spices, and a luscious caramel icing, it’s sure to be a hit at any gathering or as a sweet treat for your family.

Ingredients:

For the cake:

  • 2 eggs
  • 1 cup vegetable oil
  • 1 3/4 cups sugar
  • 2 1/4 cups self-rising flour
  • 1 teaspoon vanilla extract
  • 3 cups chopped apples, peeled
  • 1 cup chopped pecans
  • 1 teaspoon cinnamon

For the caramel icing:

  • 1/3 cup butter
  • 2/3 cup dark brown sugar, firmly packed
  • 1/3 cup milk
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pecan halves, optional (for garnish)

Instructions:

  1. Prepare the Cake:
  • Preheat the oven to 300°F and grease a 13 x 9-inch pan.
  • In a large bowl, beat the eggs. Add the vegetable oil and sugar, and stir until well blended.
  • Stir in the self-rising flour, vanilla extract, chopped apples, chopped pecans, and cinnamon until thoroughly combined.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 1 hour and 10 minutes, or until the cake begins to pull away from the sides of the pan.
  • Allow the cake to cool completely before frosting.
  1. Prepare the Caramel Icing:
  • In a saucepan over medium-low heat, melt the butter.
  • Stir in the dark brown sugar and cook, stirring constantly, for 2 minutes.
  • Add the milk and continue cooking until the mixture comes to a boil, stirring constantly.
  • Remove the saucepan from the heat and gradually stir in the powdered sugar until smooth.
  • Stir in the vanilla extract until well blended.
  • If the icing becomes too thick, you can add a little milk and blend well until you reach your desired consistency.
  1. Frost the Cake:
  • Once the cake has cooled, spread the caramel icing evenly over the top.
  • Garnish with pecan halves if desired for an extra touch of flavor and presentation.

Tips:

  • Make sure to use self-rising flour for the cake batter to ensure proper rising and texture.
  • Use ripe, sweet apples for the best flavor in the cake.
  • If you prefer a smoother icing, you can sift the powdered sugar before adding it to the caramel mixture.
  • Allow the cake to cool completely before slicing and serving to prevent the icing from melting too quickly.
