Ingredients:
For the cake:
- 2 eggs
- 1 cup vegetable oil
- 1 3/4 cups sugar
- 2 1/4 cups self-rising flour
- 1 teaspoon vanilla extract
- 3 cups chopped apples, peeled
- 1 cup chopped pecans
- 1 teaspoon cinnamon
For the caramel icing:
- 1/3 cup butter
- 2/3 cup dark brown sugar, firmly packed
- 1/3 cup milk
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- Pecan halves, optional (for garnish)
Instructions:
- Prepare the Cake:
- Preheat the oven to 300°F and grease a 13 x 9-inch pan.
- In a large bowl, beat the eggs. Add the vegetable oil and sugar, and stir until well blended.
- Stir in the self-rising flour, vanilla extract, chopped apples, chopped pecans, and cinnamon until thoroughly combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 1 hour and 10 minutes, or until the cake begins to pull away from the sides of the pan.
- Allow the cake to cool completely before frosting.
- Prepare the Caramel Icing:
- In a saucepan over medium-low heat, melt the butter.
- Stir in the dark brown sugar and cook, stirring constantly, for 2 minutes.
- Add the milk and continue cooking until the mixture comes to a boil, stirring constantly.
- Remove the saucepan from the heat and gradually stir in the powdered sugar until smooth.
- Stir in the vanilla extract until well blended.
- If the icing becomes too thick, you can add a little milk and blend well until you reach your desired consistency.
- Frost the Cake:
- Once the cake has cooled, spread the caramel icing evenly over the top.
- Garnish with pecan halves if desired for an extra touch of flavor and presentation.
Tips:
- Make sure to use self-rising flour for the cake batter to ensure proper rising and texture.
- Use ripe, sweet apples for the best flavor in the cake.
- If you prefer a smoother icing, you can sift the powdered sugar before adding it to the caramel mixture.
- Allow the cake to cool completely before slicing and serving to prevent the icing from melting too quickly.
