These Caramel Apple Cider Cookies bring the cozy flavors of fall into a delicious, chewy treat. Infused with apple cider drink mix and stuffed with gooey caramel, these cookies are perfect for any autumn gathering or simply to enjoy with a warm beverage. The combination of cinnamon, apple, and caramel creates a mouthwatering flavor that’s sure to become a favorite.

Tips:

  1. Caramel Stuffing: Make sure to completely seal the dough around the caramel to prevent it from leaking out during baking.
  2. Parchment Paper: Lining your cookie sheets with parchment paper is essential to prevent the caramel from sticking.
  3. Cooling: Allow the cookies to cool completely on the parchment paper to set properly.
  4. Storage: Store cookies in an airtight container to keep them soft and chewy. For an extra treat, microwave for a few seconds before eating to re-melt the caramel center.

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 (7.4 oz) box Alpine Spiced Apple Cider Instant Original Drink Mix (all 10 packets)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (14 ounce) bag Kraft chewy caramels

Instructions:

  1. Prepare the Oven:
  • Preheat oven to 350°F. Line cookie sheets with parchment paper to prevent sticking.
  1. Mix Dry Ingredients:
  • In a small bowl, whisk together flour, baking soda, baking powder, and cinnamon.
  1. Cream Butter and Sugar:
  • Using an electric mixer, cream together the butter, sugar, salt, and all 10 packets of apple cider drink mix until light and fluffy.
  1. Add Eggs and Vanilla:
  • Beat in the eggs one at a time. Add the vanilla extract and mix well.
  1. Combine Wet and Dry Ingredients:
  • Gradually add the flour mixture to the butter and egg mixture. Mix until just combined.
  1. Shape the Cookies:
  • Scoop out dough balls about the size of a walnut (approximately 2 tablespoons). Flatten each ball slightly in your hand. Place an unwrapped caramel in the center and wrap the dough around it, ensuring the caramel is fully enclosed. Shape into a ball.
  1. Bake:
  • Place the dough balls on the parchment-lined cookie sheets about 3 inches apart. Bake for 9-12 minutes, or until very lightly browned around the edges. The centers may appear slightly underdone, but this is fine.
  1. Cool the Cookies:
  • Once done, slide the parchment paper with the cookies off the baking sheet and onto the counter. Allow the cookies to cool completely on the parchment.

Serving:

  • This recipe makes around 2-3 dozen cookies. Serve at room temperature or slightly warmed in the microwave for a few seconds to enjoy the gooey caramel center.
