California Spaghetti Salad is a vibrant and flavorful dish that combines tender spaghetti noodles with an array of colorful and crisp vegetables, all tossed in a zesty Italian dressing. The addition of black olives adds a briny kick, while the Parmesan cheese and aromatic spices elevate the flavor profile. This salad is not only visually appealing but also packed with nutrients, making it a wholesome and satisfying meal or side dish.

California Spaghetti Salad

Ingredients:

  • 400-500 grams of spaghetti
  • 1 ½ cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 zucchinis, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 red onion, diced
  • 1 can sliced black olives, drained
  • For the dressing:
  • 1 bottle Italian dressing
  • ½ cup grated Parmesan cheese
  • 1 tablespoon sesame seeds
  • 1 teaspoon paprika
  • ½ teaspoon celery seeds
  • ½ teaspoon garlic powder

Instructions:

  1. Cook the spaghetti according to package instructions, then drain and rinse with cold water. Set aside.
  2. In a large mixing bowl, combine the diced vegetables: zucchinis, cherry tomatoes, green and red peppers, red onions, cucumbers, and black olives.
  3. In another mixing bowl, whisk together the Italian dressing, sesame seeds, grated Parmesan cheese, paprika, celery seeds, and garlic powder to make the dressing.
  4. Toss the cooked spaghetti with the chopped vegetables and olives.
  5. Pour the prepared dressing over the pasta and vegetables, and toss well to coat all ingredients evenly.
  6. Cover the bowl with plastic wrap and refrigerate for at least 3 hours before serving.

Tips:

  • Customization: Feel free to customize this salad by adding or substituting vegetables according to your preference or what’s available in your pantry.
  • Make-Ahead: This salad can be made ahead of time and stored in the refrigerator, allowing the flavors to meld together and intensify over time. It’s perfect for meal prep or entertaining.
  • Serve Chilled: For the best taste and texture, serve this salad chilled straight from the refrigerator. The cold temperature enhances the refreshing quality of the vegetables.
  • Garnish: Before serving, garnish the salad with additional grated Parmesan cheese or fresh herbs for an extra burst of flavor and visual appeal.
