This recipe yields a delightful Coconut Cream Cake with a rich and creamy frosting, perfect for special occasions or whenever you’re craving a decadent treat. Moist and flavorful layers of coconut-flavored cake are sandwiched together and topped with a luscious cream cheese frosting, then generously coated with chopped walnuts and sweetened coconut flakes. The combination of coconut, cream cheese, and nuts creates a symphony of flavors and textures that will surely impress your taste buds.

Ingredients:

  • Buttermilk: Adds moisture and tanginess to the cake.
  • Baking Soda and Baking Powder: Leavening agents that help the cake rise and become light and fluffy.
  • Butter and Shortening: Provide richness and help create a tender crumb in the cake.
  • White Sugar: Sweetens the cake batter.
  • Eggs: Bind the ingredients together and add structure to the cake.
  • Vanilla Extract: Enhances the flavor of the cake.
  • Flaked Coconut: Adds texture and coconut flavor to the cake batter.
  • All-Purpose Flour: Forms the base of the cake batter.
  • Cream Cheese: Creates a creamy and tangy frosting base.
  • Icing Sugar: Sweetens and thickens the frosting.
  • Light Cream: Adjusts the consistency of the frosting.

Instructions:

  1. Preheat the oven to 350 degrees F and grease three 9-inch round cake pans.
  2. Dissolve baking soda in buttermilk in a small bowl and set aside.
  3. In a separate bowl, cream together butter, shortening, and white sugar until light and fluffy.
  4. Stir in eggs, buttermilk mixture, vanilla extract, flaked coconut, baking powder, and all-purpose flour until just combined.
  5. Pour the batter into the prepared cake pans and bake for 30 to 35 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool.
  6. To make the frosting, beat together cream cheese, butter, vanilla extract, and icing sugar until light and fluffy. Adjust the consistency with a small amount of cream.
  7. Stir in chopped walnuts and sweetened coconut.
  8. Spread the frosting between the cake layers and over the top and sides of the cooled cakes.
  9. Garnish with additional chopped walnuts and sweetened coconut, if desired.

Tips:

  • Ensure all ingredients are at room temperature before beginning to ensure even mixing and proper incorporation.
  • Be careful not to overmix the cake batter to avoid a dense texture.
  • Allow the cakes to cool completely before frosting to prevent the frosting from melting.
