Transform your ordinary corn on the cob into a flavorful delight with this Cajun-inspired recipe. Infused with a blend of spices and topped with a creamy mayo sauce, crumbled cheese, and fresh cilantro, this dish is bursting with bold flavors and perfect for summer gatherings or backyard barbecues.

Ingredients:
- 4 ears of corn, husked
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 tablespoons mayonnaise (vegan mayo can be used)
- ⅓ cup sour cream or Mexican crema
- 1 ½ teaspoons Cajun spice
- 1 ½ teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon chopped cilantro
- ½ cup crumbled feta or cotija cheese
- 1 tablespoon lime juice
- 1 teaspoon chipotle or chili powder (optional)
How To Make Cajun Corn on the Cob:
- Preheat and Prepare: Preheat your oven to 425°F (220°C). Meanwhile, husk the corn and place each ear on a piece of foil.
- Oil and Spice Mixture: In a small bowl, whisk together the olive oil, half of the Cajun spice, half of the smoked paprika, garlic powder, onion powder, salt, and pepper. Brush each ear of corn generously with this mixture, ensuring even coverage. Wrap the corn in the foil.
- Bake the Corn: Transfer the wrapped corn to the preheated oven and bake for 30 minutes. For softer corn, remove from the oven after 30 minutes, brush with more oil-spice mixture, and bake for an additional 20-25 minutes.
- Prepare Mayo Sauce: While the corn is baking, prepare the mayo sauce. In a medium bowl, mix together the mayonnaise, sour cream, remaining Cajun spice, remaining smoked paprika, lime juice, salt, and pepper.
- Assemble and Serve: Once the corn is baked, let it cool slightly. Brush with any remaining oil-spice mixture if desired. Then, generously coat each ear with the prepared mayo sauce. If you prefer a slightly charred flavor, transfer the baked corn to a lightly greased grill pan and grill until desired charred marks appear.
- Top and Enjoy: Sprinkle the corn with crumbled feta or cotija cheese, chopped cilantro, and additional Cajun spice for extra flavor. Serve warm and enjoy the bold and delicious flavors of Cajun corn on the cob.
Tips:
- Experiment with the spice levels according to your preference. Adjust the amount of Cajun spice and chipotle or chili powder to suit your taste buds.
- For added freshness, squeeze lime juice directly onto the corn just before serving.
- If you don’t have access to an oven, you can also grill the corn on an outdoor grill or stovetop grill pan for a delicious smoky flavor.
