BYU Mint Brownies

BYU Mint Brownies are a classic and beloved treat, known for their rich chocolatey base, refreshing mint layer, and decadent chocolate frosting. These layered brownies are perfect for any occasion, offering a delightful combination of flavors and textures. Ingredients

For the Brownies:
  • 1 cup butter
  • 1/2 cup cocoa powder
  • 2 tablespoons honey
  • 4 eggs
  • 2 cups white sugar
  • 1 3/4 cups flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans
For the Frosting:
  • 10 tablespoons unsalted butter, softened
  • 4 2/3 cups powdered sugar
  • 2 tablespoons light corn syrup
  • 1/4 cup milk
  • Dash of salt
For the Mint Icing:
  • 1/2 teaspoon peppermint extract
  • 1-2 drops green food coloring
For the Chocolate Frosting:
  • 1/3 cup cocoa powder

Instructions

  1. Prepare the Brownies:
  • Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  • Melt the butter in a medium saucepan over medium heat. Remove from heat and mix in the cocoa powder until smooth. Allow to cool slightly.
  • In a large bowl, combine the cooled butter and cocoa mixture with the honey, eggs, and sugar. Mix well.
  • Add the flour, baking powder, and salt to the wet ingredients and mix until just combined. Fold in the chopped nuts.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow the brownies to cool completely in the pan on a wire rack.
  1. Prepare the Frosting:
  • In a medium bowl, beat the softened butter, powdered sugar, corn syrup, milk, and a dash of salt on low speed until combined. Increase the speed and beat until the frosting is light and fluffy. Add more milk if necessary to achieve a spreadable consistency.
  • Divide the frosting evenly into two separate bowls.
  1. Prepare the Mint Icing:
  • To one bowl of frosting, add the peppermint extract and green food coloring. Stir until well combined and evenly colored.
  • Spread the mint icing over the cooled brownies in an even layer. Place the brownies in the freezer for a short time (about 10-15 minutes) to stiffen the icing. This step is crucial to ensure the layers remain distinct and do not mix.
  1. Prepare the Chocolate Frosting:
  • To the remaining bowl of frosting, add the cocoa powder and mix until smooth.
  • Carefully spread the chocolate frosting over the firm mint layer.
  1. Finish and Serve:
  • Refrigerate the brownies until the frosting is firm, about 1 hour.
  • Once firm, cut the brownies into squares and serve. Store any leftovers in an airtight container in the refrigerator.

  • Layering: Freezing the mint layer briefly ensures that the layers remain distinct and the mint frosting does not mix with the chocolate frosting.
  • Cutting the Brownies: Use a sharp knife to cut the brownies into squares, wiping the knife clean between cuts to keep the layers neat.
