Butter Pecan Cookies

Indulge in these delicious Butter Pecan Cookies, a perfect blend of buttery goodness and nutty pecans. These cookies are soft on the inside with a slightly crisp exterior, making them an ideal treat for any occasion. The addition of a pecan half on top adds a delightful touch and extra crunch.

Ingredients:

  • 1 cup pecans, chopped
  • 7 tbsp unsalted butter
  • 1/3 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tablespoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • Pecan halves for topping each cookie

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350ºF (175ºC) and line two baking sheets with parchment paper.
  1. Prepare the Cookie Dough:
  • In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar with an electric mixer until the mixture is light and creamy.
  • Add the eggs and vanilla extract to the butter-sugar mixture. Beat for another 2 minutes until well combined.
  • Gradually add the flour, baking soda, and a pinch of salt. Mix until the dough is well blended and smooth.
  • Fold in the chopped pecans, ensuring they are evenly distributed throughout the dough.
  1. Shape the Cookies:
  • Using a medium cookie scoop or a spoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Place a pecan half on top of each cookie ball, pressing down slightly to adhere.
  1. Bake:
  • Bake in the preheated oven until the cookies are golden brown, about 10 to 15 minutes. Keep an eye on them to prevent over-baking.
  1. Cool:
  • Remove the cookies from the oven and let them cool on the baking sheets for a few minutes.
  • Transfer the cookies to a wire rack to cool completely.

Tips:

  • Butter Temperature: Ensure the butter is softened to room temperature for easier creaming with the sugars.
  • Pecan Enhancement: For an even richer flavor, you can toast the chopped pecans lightly before adding them to the dough.
  • Storage: Store the cookies in an airtight container at room temperature to keep them fresh for up to a week.
  • Freezing: The dough can be prepared in advance and frozen. Scoop the dough into balls, place on a baking sheet, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding a couple of extra minutes to the baking time.
  • Variation: Add a handful of chocolate chips or a sprinkle of cinnamon for a twist on the classic recipe.
