Broccoli Rice Cheese and Chicken Casserole is a comforting and satisfying dish that brings together tender chicken, fluffy rice, nutritious broccoli, and creamy cheese sauce. With a flavorful blend of spices and a crunchy Ritz cracker topping, this casserole is perfect for a cozy family dinner or potluck gathering.

Ingredients:

  • Butter: Adds richness and flavor to the dish.
  • Chicken: Provides protein; can use boneless, skinless chicken breasts or diced rotisserie chicken for convenience.
  • Italian Seasoning: Infuses the chicken with aromatic herbs and spices.
  • Salt and Pepper: Enhance the overall flavor of the dish.
  • Chicken Broth: Creates a flavorful base for cooking the rice and broccoli.
  • Olive Oil: Used to cook the rice and prevent it from sticking.
  • White Long Grain Rice: Adds texture and substance to the casserole.
  • Fresh Broccoli Florets: Provide vibrant color and nutrients.
  • Condensed Cream of Chicken Soup: Adds creaminess and depth of flavor to the sauce.
  • Milk and Sour Cream: Further enrich the sauce and contribute to its creamy texture.
  • Shredded Cheddar Cheese: Melts into the casserole, creating a cheesy and indulgent topping.

How To Make It:

  1. Prepare Chicken: Season chicken with Italian seasoning, salt, and pepper. Cook in melted butter until golden brown. Set aside.
  2. Cook Rice: In the same pot, combine chicken broth, olive oil, and rice. Bring to a boil, then simmer. Add broccoli during the last few minutes of cooking.
  3. Combine Ingredients: Remove pot from heat and let rice stand. Stir in cooked chicken, cream of chicken soup, milk, sour cream, optional seasonings, and half of the cheddar cheese.
  4. Bake: Transfer mixture to a casserole dish, top with remaining cheese and Ritz cracker topping. Bake until bubbly and golden.

Recipe Tips:

  • To save time, use pre-cooked rotisserie chicken instead of cooking chicken breasts.
  • Feel free to add extra vegetables such as diced bell peppers or mushrooms for more variety and nutrients.
  • Let the casserole cool for a few minutes before serving to allow it to set slightly and make it easier to serve.
