Broccoli Cheese Stuffed Chicken Breast

This recipe takes ordinary chicken breasts and transforms them into flavorful and cheesy delights. With a simple broccoli cheese mixture stuffed inside, these chicken breasts are seared to golden perfection in a skillet and then baked until tender and juicy.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 cups chopped cooked broccoli florets
  • 1 tablespoon olive oil
  • 1/2 minced red or green bell pepper
  • 2 minced garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Carefully cut a pocket in each chicken breast without cutting all the way through.
  2. Season the chicken breasts on both sides with salt, pepper, paprika, and Italian seasoning.
  3. In a bowl, combine the chopped broccoli, minced bell pepper, cream cheese, cheddar cheese, Parmesan cheese, minced garlic, and additional salt and pepper to taste.
  4. Stuff each chicken breast with the cheesy broccoli mixture.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Sear both sides of the stuffed chicken breasts until golden brown.
  7. Transfer the seared chicken breasts to a baking sheet.
  8. Preheat the oven to 400°F (200°C).
  9. Bake the stuffed chicken breasts for 20 minutes or until fully cooked through.
  10. Optionally, use toothpicks to secure the filling inside the chicken breasts before cooking, removing them before serving.

Tips:

  • Be careful when cutting the pocket in the chicken breasts to ensure you don’t cut all the way through, creating a cavity to hold the filling.
