Bread and Butter Pudding is a classic dessert that brings comfort and warmth with its rich, custardy texture and delightful hints of cinnamon and raisins. This traditional dish is simple to prepare and perfect for satisfying a sweet tooth. Here’s how you can make this delicious pudding:

Ingredients (Serves 8):

  • 8 slices of bread
  • 1/3 cup raisins
  • 2 teaspoons cinnamon
  • 1 1/2 cups milk
  • 1/4 cup heavy whipping cream
  • 2 large eggs
  • 1/4 cup granulated sugar (plus extra for topping)
  • 2 tablespoons butter, softened

Instructions:

  1. Prepare the Bread:
  • Begin by cutting the crusts off the bread slices. Butter one side of each slice generously. Then, cut each slice in half diagonally to form triangles.
  1. Layer the Bread:
  • Grease a 9×9-inch baking dish well. Place a layer of the bread triangles, buttered side up, at the bottom of the dish.
  • Sprinkle half of the raisins and half of the cinnamon over this layer.
  1. Add Second Layer:
  • Add another layer of bread triangles on top of the first, again buttered side up. Sprinkle the remaining raisins and cinnamon over this second layer.
  1. Prepare the Custard:
  • In a saucepan, warm the milk and heavy whipping cream together over medium heat. Be careful not to let it boil.
  • In a separate bowl, whisk together the eggs and 1/4 cup of granulated sugar until smooth.
  • Gradually pour a little of the warmed milk mixture into the egg mixture, whisking constantly to temper the eggs and prevent them from scrambling.
  1. Combine Custard Mixture:
  • Once tempered, slowly whisk the egg mixture back into the saucepan with the remaining milk mixture. Remove from heat.
  1. Assemble the Pudding:
  • Pour the custard mixture evenly over the layered bread in the baking dish. Let it sit for about 30 minutes so the bread can absorb the custard.
  1. Bake:
  • Preheat your oven to 350°F (175°C). Sprinkle a little extra granulated sugar over the top of the pudding for a caramelized finish.
  • Bake the pudding in the preheated oven for about 30 minutes, or until it is golden brown and set.
  1. Serve:
  • Once baked, let the pudding cool slightly. Serve warm and enjoy this comforting dessert.

Description and Tips:

  • Texture and Flavor: This Bread and Butter Pudding has a creamy custard base with layers of buttery bread, infused with sweet raisins and a touch of cinnamon for warmth.
  • Custard Tips: Tempering the egg mixture with the warm milk mixture is crucial to avoid curdling. Take your time and whisk continuously.
  • Serving Suggestions: This pudding is best served warm. For an extra indulgent touch, consider serving it with a dollop of whipped cream or a scoop of vanilla ice cream.
  • Variations: You can add a twist by including chocolate chips, using different types of dried fruit, or adding a splash of vanilla or almond extract to the custard mixture.

This Bread and Butter Pudding is a timeless dessert that brings a homely, nostalgic feel to any meal. Enjoy the rich flavors and creamy texture that make it a favorite comfort food.
