This Blooming Quesadilla Ring is a fun and creative way to enjoy a classic Tex-Mex favorite. Filled with flavorful shredded chicken, onions, peppers, and cheese, each tortilla cone is rolled and arranged to form a beautiful ring shape. Baked until golden and crispy, this dish makes for an impressive appetizer or party centerpiece. Serve it with your favorite dipping sauce and garnishes for a delicious and interactive dining experience.

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño, chopped
  • 1 cup taco sauce
  • 20 taco-size tortillas
  • 3 cups shredded cheddar cheese
  • 3 cups shredded Monterey jack cheese

Instructions:

  1. Preheat the Oven: Preheat the oven to 375˚F. Line a baking sheet with parchment paper.
  2. Prepare the Filling: In a large bowl, combine the shredded chicken, chopped onion, red bell pepper, jalapeño, and taco sauce. Mix until well combined. Set aside.
  3. Assemble the Quesadillas: Cut each tortilla in half. Place about 2 tablespoons each of shredded cheddar cheese, shredded Monterey Jack cheese, and the chicken mixture onto each tortilla half. Roll the tortillas into cones, starting from the cut edge.
  4. Create the Ring: Place a wide mouth jar or glass in the center of the baking sheet. Arrange about 13 tortilla cones around the jar, with the points of the cones facing the center and touching the jar. Sprinkle some cheddar and Monterey Jack cheese over this layer. Repeat with two more layers of tortilla cones, finishing with a layer of cheese on top.
  5. Bake: Remove the jar from the center of the ring. Bake the quesadilla ring in the preheated oven until the cheese is melted and the edges of the tortillas are crispy, about 15-20 minutes.
  6. Serve: Carefully transfer the blooming quesadilla to a serving platter. Place your favorite dip in the center of the ring and top with desired garnishes. Serve immediately.

Tips:

  • Customize the filling according to your preferences by adding ingredients like black beans, corn, or diced tomatoes.
  • Experiment with different cheese blends for unique flavor combinations.
  • Ensure the tortillas are tightly rolled into cones to prevent the filling from spilling out during baking.
  • Serve with a variety of dipping sauces such as salsa, guacamole, or sour cream for added flavor.
