Indulge in the classic comfort of Beef, Liver, and Onions – a hearty and flavorful dish that brings together tender beef liver, sautéed onions, and a savory pan sauce. The liver is coated in a seasoned flour mixture, ensuring a delightful texture and taste.

Beef, Liver, and Onions Recipe

Ingredients:

  • ½ cup flour
  • 1 pound beef liver, sliced into half-inch pieces
  • ½ cup butter
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • Cooking oil
  • 1-2 teaspoons fresh chopped sage
  • 2 cups finely chopped onion
  • ½ cup beef broth
  • 1 teaspoon chopped Italian parsley

How to Make:

  1. In a bag, combine flour, salt, and pepper. Place the sliced beef liver in the bag and shake until well coated.
  2. In a frying pan, melt 2 to 3 tablespoons of butter with a little oil. Sauté the chopped onions over medium heat until translucent. Remove onions and season with sage, salt, and pepper.
  3. In the same skillet, melt 3-4 tablespoons of butter and a little oil over high heat. Add the coated liver slices and cook for about 5 minutes, stirring constantly.
  4. Reintroduce the sautéed onions to the liver, heat through, and transfer the mixture to a serving dish.
  5. In the same skillet, deglaze with beef broth and let it simmer until a thick sauce is formed.
  6. Pour the sauce over the liver and onions, sprinkle with chopped Italian parsley, and serve.

Tips:

  1. Liver Preparation: Ensure the liver is sliced uniformly for even cooking.
  2. Sage Flavor: The addition of fresh chopped sage provides a fragrant and herbal note to the dish.
  3. Sautéing Onions: Cook the onions until they are soft and golden for sweetness and depth of flavor.
  4. Deglazing the Pan: Use beef broth to deglaze the pan, scraping up any flavorful bits for a rich sauce.
  5. Presentation: Sprinkle chopped Italian parsley on top for a burst of freshness and color.
