How To Make It:

  1. Preheat Oven: Preheat the oven to 375°F.
  2. Prepare Peppers: Cut the tops off the bell peppers, remove the seeds and spines, and set aside.
  3. Prepare Baking Dish: In a 9×13 baking pan, combine beef broth, diced tomatoes, and chopped onion. Stir well to combine.
  4. Prepare Filling: In a large mixing bowl, combine ground beef, cooked rice, diced tomatoes, parmesan cheese, parsley, garlic, salt, and pepper. Mix well.
  5. Stuff Peppers: Spoon the meat mixture into each bell pepper until filled. Place the tops back on each pepper.
  6. Bake: Place the stuffed peppers in the baking pan. Cover with aluminum foil and bake for one hour.
  7. Add Cheese: Remove the foil, sprinkle mozzarella cheese on top of each pepper, and return to the oven for another 30 minutes or until the cheese is melted and bubbly.
  8. Serve: Once the stuffed peppers are cooked to perfection, serve hot and enjoy!
