Avocado Tacos

Avocado Tacos are a delicious and low-carb alternative to traditional tacos, combining the rich, creamy taste of ripe avocados with savory taco-seasoned ground beef. These stuffed avocados are not only flavorful but also packed with healthy fats and nutrients. Perfect for a quick dinner or a unique appetizer, these avocado tacos will become a favorite in no time. Here’s how to make them:

Ingredients

  • 1 lb. ground beef
  • 1 packet of taco seasoning
  • ½ onion, chopped
  • 1 cup shredded taco blend cheese
  • 4 tablespoons sour cream
  • 4 tablespoons salsa
  • ¼ cup green onions, chopped
  • 2 ripe avocados

Instructions

  1. Cook the Beef:
  • Heat a skillet over medium-high heat. Add the ground beef and chopped onion to the skillet. Cook until the beef is completely browned and the onions have softened, about 7-10 minutes.
  • Drain any excess fat from the skillet.
  1. Season the Meat:
  • Sprinkle the taco seasoning over the browned meat and stir to combine. Cook for an additional 2-3 minutes, ensuring the seasoning is well mixed and the beef is fully coated.
  1. Prepare the Avocados:
  • While the meat is cooking, cut the avocados in half lengthwise and remove the pit.
  • Scoop out some of the flesh from the inside of each avocado half, creating a small well for the taco filling.
  1. Assemble the Tacos:
  • Fill each avocado half with the seasoned taco meat.
  • Top each with shredded taco blend cheese, a dollop of sour cream, and a spoonful of salsa.
  • Garnish with chopped green onions.
