Artichoke Chicken is a delicious and easy-to-make dish that brings together the tangy flavor of artichokes with the richness of Parmesan cheese and the creaminess of mayonnaise. The garlic adds a subtle kick, making this dish a favorite for family dinners or entertaining guests.

Artichoke Chicken Recipe

Ingredients:

  • 6 boneless, skinless chicken breast halves
  • 1 (14-ounce) can water-packed artichoke hearts, well drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 2 garlic cloves, minced (or 1/2 teaspoon garlic powder)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and spray a 13×9 inch baking dish with cooking spray.
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides and place them in the prepared baking dish.
  3. Make the Topping: In a medium bowl, combine the chopped artichoke hearts, grated Parmesan cheese, mayonnaise, and minced garlic. Mix until well combined.
  4. Top the Chicken: Spread the artichoke mixture evenly over the chicken breasts.
  5. Bake: Bake, uncovered, for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the topping starts to brown.

  3. Flavor Boost: For added flavor, you can mix in a teaspoon of Italian seasoning or fresh herbs like basil or parsley into the artichoke mixture.
  4. Cheese Options: If you prefer, you can substitute Parmesan with Pecorino Romano or a combination of both for a different flavor profile.
  5. Leftovers: This dish reheats well, making it a great option for meal prep. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
