Arizona Sunshine Lemon Pie is a delightful, zesty treat that captures the essence of citrusy freshness. This unique recipe uses the entire lemon, peel included, resulting in a bold and vibrant lemon flavor that’s both refreshing and invigorating.

Arizona Sunshine Lemon Pie

Ingredients:

For The Pie:

  • 1 large lemon, washed and cut into pieces (whole lemon, including peel)
  • 4 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar
  • 1 (9 inches) pie crust, unbaked (You can use a frozen deep dish if desired)

For the Topping: (Optional)

  • 1 cup whipping cream
  • 2 tablespoons sugar

How To Make Arizona Sunshine Lemon Pie:

  1. If using a frozen deep-dish pie crust, place it on a cookie sheet for stability. Preheat the oven to 350 degrees.
  2. Wash the lemon thoroughly, cut it into pieces, and remove all the seeds. Leave the peel on as you will blend the whole lemon. Place the lemon pieces in a high-powered blender, such as a Vitamix.
  3. Add the eggs, melted butter, vanilla, and sugar to the blender. Blend until smooth, starting at power 5 and gradually increasing to 10.
  4. Pour the blended mixture into the pie crust and bake until set, approximately 40 minutes.
  5. Once the pie is set, allow it to cool, and then chill it in the refrigerator.

For the Topping:

  1. Place a mixing bowl and beaters in the freezer for about 20 minutes. Add the whipping cream and sugar to the chilled bowl. Whip until peaks form.
  2. Slice the chilled pie and serve with a dollop of the whipped cream on top. The pie can also be enjoyed warm or at room temperature, but it is best served chilled.
