This Apple Pie Bread with Streusel Topping combines the best of apple pie and a cozy homemade loaf. Ingredients

Crumble Topping:

  • 3 tablespoons unsalted butter, melted
  • ⅓ to ½ cup all-purpose flour, plus 1 to 2 tablespoons more if needed
  • 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 teaspoon cinnamon
  • ¼ to ½ teaspoon salt, or to taste

Bread:

  • 1 large egg
  • ½ cup light brown sugar, packed
  • ⅓ cup canola, vegetable, or liquid-state coconut oil
  • ⅓ cup granulated sugar
  • ¼ cup sour cream or Greek yogurt (use varieties with fat in them)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger, or to taste
  • ½ teaspoon ground nutmeg, or to taste
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt, or to taste
  • 1 ½ cups grated apples, peeled first (Granny Smith, Fuji, Gala, Honeycrisp, or similar varieties)

Instructions

Prepare the Oven and Pan:

  1. Preheat oven to 350°F. Spray a 9×5-inch loaf pan very well with floured cooking spray or grease and flour the pan; set aside.

Make the Crumble Topping:

  1. In a medium bowl, add the melted butter, ⅓ cup flour, sugars, cinnamon, and salt. Lightly fluff with a fork to combine until small marbles and pebbles form. If the topping is too wet and resembles wet sand rather than small pebbles, add additional flour up to ½ cup total to achieve the desired consistency. Set aside.

Make the Bread:

  1. In a large bowl, whisk together the egg, brown sugar, oil, granulated sugar, sour cream or Greek yogurt, vanilla, cinnamon, ginger, and nutmeg until well combined.
  2. Add the flour, baking powder, baking soda, and salt. Fold with a spatula or stir gently with a spoon until just combined; avoid overmixing.
  3. Fold in the grated apples gently.
  4. Pour the batter into the prepared pan, smoothing the top lightly with a spatula.
  5. Evenly sprinkle the reserved crumble topping over the batter.

Bake the Bread:

  1. Bake for about 45 to 52 minutes (I baked for 48 minutes), or until a toothpick inserted in the center comes out clean or with a few moist crumbs, but no batter. Tip: Tent the pan with a sheet of foil draped loosely over it at the 30 to 35-minute mark to prevent the tops and sides from becoming too browned before the center cooks through.
  2. Allow the bread to cool in the pan for about 30 minutes before turning out onto a wire rack to cool completely before slicing and serving.

Tips

  • Apple Varieties: Granny Smith apples add a nice tartness, while Fuji or Honeycrisp provide a sweeter taste. Choose according to your preference.
  • Mixing: Overmixing the batter can lead to dense bread. Stir until ingredients are just combined.
  • Tent Foil: Tenting with foil helps ensure the bread cooks evenly without the exterior becoming too dark.
  • Serving: This bread is delicious on its own or with a spread of butter or cream cheese.
