Apple Enchiladas offer a delightful twist on traditional enchiladas, bringing together the flavors of sweet, spiced apple filling wrapped in warm flour tortillas. The combination of cinnamon, sugars, and a buttery sauce creates a comforting and indulgent dessert.

Apple Enchiladas

Ingredients:

  • 1 can (21 ounces) apple fruit filling and topping (or other fruit fillings)
  • 6 (8 inches) flour tortillas
  • 1 teaspoon cinnamon
  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

How to Make:

  1. Spoon the fruit filling evenly down the centers of the flour tortillas.
  2. Sprinkle cinnamon over the fruit filling.
  3. Roll up each tortilla, placing them seam side down in a lightly greased baking dish.
  4. In a saucepan, bring the butter and the next three ingredients to a boil.
  5. Reduce the heat and simmer, stirring constantly for about 3 minutes.
  6. Pour the butter and sugar mixture over the enchiladas, making sure to coat them evenly.
  7. Let the enchiladas stand for 30 minutes.
  8. Bake at 350°F for 20 minutes.

Tips:

  1. Tortilla Size: Ensure that you use the right size of tortillas (8 inches) to achieve a balanced ratio of filling to tortilla.
  2. Fruit Filling Variation: While the recipe suggests apple filling, feel free to experiment with other fruit fillings like cherry, peach, or blueberry for a diverse flavor profile.
  3. Butter and Sugar Mixture: Be attentive while simmering the butter and sugar mixture to prevent burning. Stir constantly until the sugars dissolve and the mixture thickens.
  4. Serving Suggestions: Serve these apple enchiladas warm. They pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
  5. Pre-soaking Time: Allowing the enchiladas to stand for 30 minutes before baking ensures that they absorb the flavors of the butter and sugar mixture.
  6. Experimentation: Get creative with additional toppings, such as chopped nuts or a drizzle of caramel, to enhance the presentation and taste.
