Antipasto Salad

Antipasto Salad is a vibrant and flavorful Italian-inspired salad that’s perfect for a light lunch or as a side dish for any meal. This salad combines crisp romaine lettuce with a variety of delicious toppings, including provolone cheese, marinated artichokes, olives, salami, pepperoni, and more. Tossed with your favorite Italian dressing, it’s a refreshing and satisfying dish that brings a burst of Mediterranean flavors to your table.

Ingredients

  • 8 cups chopped romaine lettuce
  • 3/4 cup grape or cherry tomatoes, halved
  • 6 ounces provolone cheese, diced
  • 4 ounces marinated artichokes, drained and chopped
  • 1/2 cup olives (about 3 ounces)
  • 2 ounces hard salami, diced
  • 2 ounces pepperoni, quartered
  • 1/4 cup sliced pepperoncinis
  • 1/4 cup sliced red onion
  • 1/4 cup shredded Parmesan cheese (more to taste)

Instructions

  1. Assemble the Salad: In a large shallow salad bowl, add the chopped romaine lettuce as the base layer.
  2. Add the Toppings: Layer the halved tomatoes, diced provolone cheese, chopped marinated artichokes, olives, diced salami, quartered pepperoni, sliced pepperoncinis, and sliced red onion on top of the lettuce.
  3. Add the Cheese: Sprinkle the shredded Parmesan cheese over the top of the salad.
  4. Toss and Serve: Toss the salad together with your favorite Italian dressing until all ingredients are evenly coated. Serve immediately and enjoy!

Notes

  • Dressing Options: There are many excellent Italian dressings available. Some favorites include Olive Garden’s copycat dressing (available in the dressing aisle and at Costco) and Marie’s Parmesan Italian dressing. You can also make a simple homemade Italian dressing with the following ingredients:
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste Whisk these ingredients together and drizzle over the salad.

Tips

  • Customize It: Feel free to customize this salad with your favorite antipasto ingredients, such as roasted red peppers, sun-dried tomatoes, or capicola.
  • Make Ahead: You can prep the ingredients ahead of time and store them separately in the refrigerator. Assemble and toss the salad just before serving for the freshest taste.
  • Serving Size: This recipe serves about 6-8 people as a side dish. Adjust the quantities based on your needs.
