- 1 lb boneless skinless chicken breasts
- 2 cups Minute rice (can substitute with brown rice)

- 1 envelope Lipton onion soup mix
Instructions:
- Preheat your oven to 350°F (175°C). Butter a 9×13-inch baking pan using the tablespoon of butter.
- In a medium bowl, mix together the cream of mushroom soup, cream of chicken soup, Minute rice, and one can of water until well combined.
- Pour the soup and rice mixture into the buttered baking pan, spreading it out evenly.
- Place the chicken breasts on top of the soup and rice mixture in the baking pan.
- Sprinkle the Lipton onion soup mix evenly over the chicken breasts.
- Cover the baking pan with foil and place it in the preheated oven.
- Bake for approximately 1 to 1 1/2 hours, or until the chicken is cooked through and tender.
- Once cooked, remove the baking pan from the oven and serve the Amazing Forgotten Chicken hot.
Tips:
- You can use either white or brown Minute rice for this recipe, depending on your preference.
- If you’d like to add more flavor, you can sprinkle some additional herbs or spices over the chicken before baking.
- Make sure to check the chicken for doneness by cutting into the thickest part of the breast. If the juices run clear and there is no pink in the center, it’s fully cooked.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
