7 Up Pound Cake

Ingredients:

  • 1 1/2 cups Butter, softened
  • 3 cups Sugar
  • 5 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Almond (or Lemon) Extract
  • 3 cups All-purpose Flour
  • 1 cup Sprite, 7-UP, or Sierra Mist

Instructions:

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare a Bundt pan by greasing it thoroughly to prevent sticking.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the sugar gradually, about 1 cup at a time, beating well after each addition. Scrape down the sides of the bowl as needed to ensure thorough mixing.
  3. Incorporate Eggs and Extracts: Once the butter and sugar are well combined, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and almond or lemon extract, ensuring that the flavors are evenly distributed throughout the batter.
  4. Alternate Flour and Soda: Gradually add the all-purpose flour to the batter, alternating with the Sprite, 7-UP, or Sierra Mist. Begin and end with the flour, mixing well after each addition. This method helps to ensure a smooth and evenly mixed batter.
  5. Bake the Cake: Pour the batter into the prepared Bundt pan, spreading it evenly. Bake in the preheated oven for 1 hour to 1 hour 10 minutes, or until the cake is firm to the touch and a toothpick inserted into the center comes out clean. If using a loaf pan, divide the batter between two pans and bake for 50-60 minutes.
  6. Cool and Serve: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes. Then, carefully invert the cake onto a wire rack to cool completely.
