These 5-Ingredient Sugar Cookie Cheesecake Bars are a delightful combination of chewy sugar cookie crust and creamy cheesecake filling, with a fun burst of color from rainbow sprinkles. Perfect for parties, bake sales, or as an easy dessert, these bars come together in no time and are guaranteed to impress!

Ingredients

  • 1 large egg
  • 1½ tablespoons vanilla extract
  • 8 oz cream cheese, at room temperature
  • 1 (16.5 oz) tube of sugar cookie dough, at almost room temperature
  • Rainbow sprinkles

Preparation Time: 10 minutes

Cooking Time: 20-25 minutes

Total Time: 35 minutes

Servings: 12 bars

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Press the Cookie Dough: Press the sugar cookie dough evenly into the bottom of the prepared baking pan to form the crust.
  3. Prepare the Cheesecake Filling: In a medium mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the egg and vanilla extract, and continue mixing until fully combined and smooth.
  4. Assemble the Bars: Pour the cheesecake mixture over the cookie dough crust, spreading it evenly. Sprinkle the rainbow sprinkles generously on top for a fun and colorful finish.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are set and the center is slightly jiggly.
  6. Cool and Slice: Allow the bars to cool completely in the pan. Once cooled, use the parchment paper overhang to lift them out of the pan and onto a cutting board. Slice into 12 bars and serve.

Tips for Success

  • Room Temperature Ingredients: Make sure the cream cheese and cookie dough are at room temperature for easier mixing and even baking.
  • Prevent Overbaking: Keep an eye on the bars as they bake. The center should still have a slight jiggle when removed from the oven, as it will firm up while cooling.
  • Custom Sprinkles: Swap the rainbow sprinkles for seasonal or themed sprinkles to match holidays or special occasions.
  • Make Ahead: These bars can be made a day in advance and stored in the refrigerator. Just bring them to room temperature before serving.
  • Storage: Store leftover bars in an airtight container in the refrigerator for up to 5 days.

With their creamy, chewy layers and festive sprinkles, these 5-Ingredient Sugar Cookie Cheesecake Bars are as delightful to look at as they are to eat. Give them a try for your next dessert craving or celebration!
