This 20-Minute Baked Lime Cilantro Chicken Breasts recipe is a quick and flavorful dish perfect for busy weeknights. The combination of spices, lime juice, and fresh cilantro creates a deliciously zesty and aromatic meal. With minimal prep and cleanup, you’ll have a tasty, juicy chicken dinner ready in no time.

Ingredients

  • 3 pounds boneless skinless chicken breasts (4 extra-large breasts or 6 average-sized)
  • 3 to 4 tablespoons olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup light brown sugar, packed
  • 2 to 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 to 2 teaspoons paprika or smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional, to taste)
  • Freshly squeezed lime juice, to taste
  • 2 to 3 tablespoons fresh cilantro, finely minced, for garnishing (or to taste)

Instructions

  1. Preheat and Prep:
  • Preheat your oven to 425°F (use convection if available). Line a baking sheet with foil for easier cleanup (optional but highly recommended).
  1. Prepare Chicken:
  • Place the chicken breasts on the prepared baking sheet. Pound them to an even thickness using a meat pounder, rolling pin, heavy frying pan, or even an empty wine bottle. The goal is to ensure uniform thickness for even cooking, not necessarily to make them thin.
  1. Season Chicken:
  • Drizzle the chicken breasts evenly with olive oil. Generously season both sides with kosher salt and freshly ground black pepper.
  1. Prepare and Apply Rub:
  • In a small bowl, combine the light brown sugar, chili powder, cumin, paprika (or smoked paprika), garlic powder, and cayenne pepper. Stir to mix well.
  • Spoon the spice rub evenly over both sides of the chicken breasts. Apply slightly more rub to the side facing up.
  1. Bake:
  • Bake the chicken in the preheated oven for about 20 minutes, or until the internal temperature reaches 165°F and the chicken is cooked through.
  1. Add Final Touches:
  • Remove the chicken from the oven and drizzle with freshly squeezed lime juice. Garnish with finely minced fresh cilantro.
  1. Rest and Serve:
  • Allow the chicken to rest for 5 to 10 minutes before slicing. This resting period helps lock in the juices and moisture. If desired, cover the chicken with foil to keep it warm while resting.

  • Uniform Thickness: Ensuring the chicken breasts are of even thickness helps them cook evenly and prevents some parts from being overcooked while others are undercooked.
  • Spice Rub: Feel free to adjust the spices to your taste. If you prefer a milder flavor, reduce the cayenne pepper or omit it altogether.
